Özet

İngilizce (OpenAlex)

Many vegetable and fruit peels, which have high antioxidant properties and contain phenolic compounds beneficial for health, pollute the environment as waste. Evaluating these peels reduces waste and contributes to national economies. Therefore, some tuber waste peels collected from the Kahramanmaraş region of Turkey were investigated. Antioxidant activity, total phenolic contents, and the types and amounts of phenolic compounds were studied in the methanolic extracts obtained by reflux extraction. Statistical analyses were also conducted using correlation, regression, variance, and artificial intelligence techniques. Thirty-five phenolic compounds were analysed in these radish peel samples, and 23 were detected using the LC-MS/MS instrument. Ferulic acid was found at high levels in the R4 sample (8258 µg/g), and at moderate levels in R5 (1774 µg/g) and R7 (1515 µg/g). Notably, significantly high levels of vanillin and pinoresinol were detected in all samples.
